A few of you are probably familiar with the physical ailments I suffer from, one of which is an intolerance to wheat. This threw me for a loop just prior to Christmas (I know, great timing) and I have been wheat-free ever since. Most people ask my what my diet consists of (most common question: do you eat only salad and veggies?), but what they don't understand is that there are many substitutes that one can use. Even though there are many substitutes, I try to stick with the basics and haven't been to adventurous in feeding my sweet tooth by trying wheat-free desserts. Until this week, that is. A dear friend passed on a recipe for peanut butter, chocolate chip cookies and I could NOT resist. Peanut butter and chocolate are my two favorite food combos, how could I? And besides, the recipe is easy and you can't even tell the difference. I had to make them. Bon appetit! (If you're interested in the recipe, let me know!)
Probably said it before... but... having two siblings who are allergic to wheat and dairy, and having been sensitive to both (i.e. an allergy that's tolerable)... I'm happy for ya! We just had a batch of those disappear here too... half with chocolate chips, half without (for the non-dairy persons).
